Is Lapu Lapu the new endangered fish?

Unless something is done soon, the succulent lapu-lapu (grouper)will soon no longer be part of the menu in your favorite Chinese restaurant. The reason: the supply is facing imminent collapse!

Forty years of unregulated cyanide and dynamite fishing, in addition to the rising trend to target vulnerable spawning areas of lapu-lapu  (grouper), have all contributed to the rapid disappearance of the highly valued fish.

Most of the spawning areas of lapulapu  (grouper) can be found in Palawan, the country’s last frontier. Palawan and its territorial waters host some of the most productive yet exploited fisheries on earth, according to World Wide Fund for Nature (WWF), a global conservation group. Fish Quekiam

The Filipino patterns in eating and preparing food have changed. These  changes are due to the increase in the number of women joining the workforce. Another reason is the western influence on acceptance of fast foods. Hence, there is an increased demand for instant or convenience foods, which are easy to prepare, taste good and provide the desired nutrients.

Fish Quekiam

Ingredients for quekiam

1/2 kilo fish meat (dalagang bukid)

1/4 kilo shrimp meat

1 egg (well beaten)

1/2 cup chopped onion

1/2 cup chopped singkamas

1/2 cup celery

1/2 cup chopped carrots

1/2 cup flour

1 1/2 teaspoons nguyong powder

1/2 teaspoons salt

1 1/2 tablespoon salt

taupee wrapper

cooking oil

Procedure in making the quekiam

1 separate the fish meat from the skin and bones .

2 Grind or chop fish meat and shrimp.

Fish Noodles

Fish Noodles

Ingredients

1 cup minced fish meat (bisugo or dalagang bukid)

3 cups flour (sifted)

1 cup flour for dusting

1 egg yolk

1 1/2 teaspoons lye

Procedure

1. Mix the sifted flour and the minced fish meat.

2. Add the lye, salt, and egg yolk to the flour and meat.

3 Mix all the ingredients througly.

4. Cut the mixture into four.

5. Knead each of the portions.

6. Cut the portions by using a noodle machine.

7. Blanch the noddles in boiling water for one minute or until the noodles float.

8. Immerse the noddles in cold or running  water.

9. Drain the noodles.

10. Toss the noddles in cooking oil.
